Matthew Cruse, a chef with Sussex Uni Food, is a familiar face behind the scenes at Eat Central, where he helps create many of the meals enjoyed by students and staff each day. Having recently completed his apprenticeship, Matthew has already made an impressive mark by competing in the Apprentice Chef of the Year – a nationwide competition held across Chartwells businesses.
The challenge
The competition tests finalists to the limit, challenging them to create a three-course menu from a mystery box of ingredients in just two and a half hours. This year’s brief included wild venison, fresh hake, and seasonal produce such as rhubarb and asparagus.
Apprentice chefs were given ten days to plan their menus before the final, where they were judged against rigorous criteria including culinary skill, flavour, presentation, cleanliness, waste reduction, and the overall balance of their dishes. The competition is designed not only to test ability but also to support apprentices in developing their skills, building confidence, and connecting with peers across the industry.
A standout achievement
Following a strong performance in a highly competitive field, Matthew secured an impressive third-place finish – a fantastic achievement at a national level.
Back on campus, Matthew has returned to the Eat Central kitchen – but with new experience, confidence, and inspiration. His journey is a reminder of the talent within our community and the opportunities that help it grow.
